🍋 Ingredients:
For the Crust:
1 cup unsalted butter (cold, cut into cubes)
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 tsp salt
For the Filling:
1 ½ cups granulated sugar
1/4 cup all-purpose flour
4 large eggs
Zest of 2 lemons
2/3 cup freshly squeezed lemon juice (about 3-4 lemons)
Topping:
Powdered sugar, for dusting
Optional: small lemon slices or lavender buds for garnish
🥣 Instructions:
Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper for easy removal.
Make the crust: In a large bowl, mix flour, sugar, and salt. Add cubed butter and cut in using a pastry cutter or your fingers until it resembles coarse crumbs. Press evenly into the bottom of your prepared pan.
Bake the crust for 18–20 minutes or until lightly golden. Remove and let cool slightly.
Prepare the filling: Whisk together sugar, flour, eggs, lemon zest, and lemon juice until smooth and well combined.
Pour the filling over the warm crust and return to the oven. Bake for 20–25 minutes or until the center is just set and no longer jiggly.
Let cool completely, then chill in the fridge for at least 1 hour before slicing.
Cover with powdered sugar, cut into bars, and garnish if wanted.
