Makes 1 pie (8 slices)
🧁 Ingredients:
For the Pie Crust (or use store-bought if you prefer):
2 ½ cups all-purpose flour
1 tsp salt
1 tsp sugar
1 cup cold unsalted butter (cut into small cubes)
6–8 tbsp ice water
For the Filling:
6 cups peeled and sliced Granny Smith or Honeycrisp apples
2/3 cup granulated sugar
2 tbsp all-purpose flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
1 tbsp butter (to dot on top before baking)
Optional Topping:
1 egg, beaten (for egg wash)
Coarse sugar, for sprinkling
🥣 Instructions:
Make the crust:
In a large bowl, combine flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Add ice water, 1 tbsp at a time, just until the dough comes together. Divide into two discs, wrap in plastic, and chill for at least 1 hour.Preheat the oven to 375°F (190°C).
Prepare the filling:
In a large bowl, toss sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.Roll out the dough:
Roll one disc into a 12-inch circle and place it in a 9-inch pie pan. Add the apple filling and dot with small pieces of butter.Top the pie:
Roll out the second disc and cover the pie with a lattice or full crust. Seal the edges, crimp, and cut slits if using a full top. Brush with egg wash and sprinkle with coarse sugar if desired.Bake for 50–60 minutes, until the crust is golden brown and the filling is bubbling.
Cool on a wire rack. Serve warm or chilled. (Add some vanilla ice cream if you want that cozy touch!)
